American IPA
Brewed April 14, 2018
This beer is my first attempt at brewing an all grain batch using my new Rubbermaid 10 gallon cooler mash tun. I am using a clone recipe of Pliny the Elder released to the American Homebrewer's Association by Russian River Brewing in Santa Rosa, CA as a basis. I am not using the recipe one for one largely because of the crazy hop bill and the fact that I have low expectations for my first all grain batch.
Ingredients
Malts
13.5 lbs Two Row Pale Malt
10 oz Crystal 40°L Malt
10 oz Carapils Malt
1 lb Corn Sugar
Hops
4 oz CTZ Hops (13.0% AA) - 0 minutes
1 oz Simcoe Hops (11.2% AA) - 45 minutes
3 oz Simcoe Hops (11.2% AA) - 75 minutes
2 oz Centennial Hops (8.8% AA) - 75 minutes
Yeast
1 package WLP001 California Ale Yeast
Brewing Instructions
1. Heat 8 gallons of strike water to 161°F
2. Add 6 gallons of water to the mash tun
3. Add all grains to mash tun and confirm temperature of 151°F
4. Steep grains for 60 minutes
5. While steeping, heat 2.75 gallons of water to 170°F for lautering
6. Extract first runnings into boil kettle
7. Add additional 2.75 gallons water at 170°F to the mash tun
8. After 15 minutes, collect second runnings
9. Total wort volume should be ~7 gallons
10. Add Corn Sugar to wort
11. Bring water to a boil and wait for the hot break
12. Add 4 oz CTZ hops
13. At 45 minutes, add 1 oz Simcoe hops
14. At 70 minutes, add one tablet Whirlfloc
15. At 75 minutes, add 3 oz Simcoe hops and 2 oz Centennial hops
16. At 75 minutes, chill the wort to approx. 75°F
17. Move to the primary fermenter
18. Pitch yeast from yeast starter
19. At 1 week, rack to the secondary fermenter
20. At 3 weeks, keg beer at 30 PSI and 40°F
21. At 4 weeks, serve at 5 PSI
Starter & Notes
Boil 1/2 cup DME in 1 L of solution for 10 minutes
Let cool to 75°F
Shake vigorously to aerate
Pitch 1 package WLP001
Let sit for 36 hours shaking occasionally
